Professor Rosalind Gibson
Rosalind Gibson's research involves studies on the aetiology and functional health consequences of mild iron and zinc deficiency in "high risk" population groups (e.g. pregnant women and menstruating women, infants, preschool children and vegetarians). A second research focus is the development of food-based strategies to enhance the content and bioavailability of micronutrients in predominantly plant-based diets consumed in developing countries, and the impact of these dietary interventions on subsequent growth, health, and cognitive development.
